Pumpkin Cobbler

Pumpkin Cobbler

 
1  18.25 oz box yellow cake mix  (reserve 1 cup for topping)
½ cup butter
1 egg
1 (30 oz) can pumpkin
3 eggs
1 cup evaporated milk
1 tsp vanilla extract
1 tsp cinnamon
1 cup brown sugar

Cut butter into cake mix.  Add 1 egg.  Mix with fork.  Press into ungreased 13x9x2 pan
Mix pumpkin, 3 eggs, evap. milk, vanilla, cinnamon and brown sugar.  Pour over crust.

Topping
1 cup reserved cake mix
½ cup granulated sugar
¼ cup butter
Mix topping ingredients together.  Sprinkle over pumpkin mixture.  Sprinkle with nuts if desired.  Bake at 350 degrees for 45 to 50 minutes or until set in the middle.  Serve with cool whip.
